A commercial extraction hood (or kitchen canopy) removes heat, steam, smoke, and grease-laden vapour from a commercial kitchen, keeping the workspace safe and legally compliant. Why extraction is essential

Cooking — especially frying, chargrilling, and charcoal grilling — produces intense heat, grease-laden vapour, and combustion products. Adequate extraction protects staff, prevents grease build-up (a serious fire risk), and is a condition of Environmental Health approval. Charcoal grills and mangals, fryers, and wok cookers all demand properly rated extraction.

Sizing your extraction

Extraction is rated in m³/h (cubic metres per hour) of airflow. The canopy should overhang the cooking line, and the fan must move enough air for the heat and vapour produced — high-heat equipment like chargrills and wok cookers needs far more extraction than a light cooking line. A centrifugal box fan drives the airflow; grease filters trap grease before it enters the ductwork. Always match the canopy and fan to your equipment and get the make-up air right.

Grease filters and cleaning

Baffle or mesh grease filters trap grease and must be cleaned regularly — a blocked filter reduces airflow and raises fire risk. Keep filters clean, and schedule professional duct cleaning to stay compliant and safe.
