What does a dough roller do, and how is it different from a sheeter?

A dough roller presses a portioned ball into a finished round base in one or two passes. A dough sheeter reduces a large mass of dough into a continuous sheet of set thickness. They look similar and they are not the same machine.

A dough roller (or dough former) takes a pre-weighed ball — typically 180g to 350g for a pizza — and passes it between a pair of counter-rotating rollers set to a chosen gap. A twin-roller machine has two roller pairs mounted at 90° to each other: the first pass flattens the ball into an oval, the second pass, turned through a right angle, opens it into a round. The result is a consistent disc in three to five seconds.

A dough sheeter uses a moving belt to feed a large piece of dough repeatedly through a single adjustable roller pair, stepping the gap down each time to produce a long sheet. That is what you want for croissants, puff pastry, and laminated doughs, not for individual pizza bases.

For a pizzeria the distinction is straightforward: buy a roller if you make round bases from portioned balls, and a sheeter if you make pastry or rectangular tray bakes. A few machines described as "dough rollers" are in fact benchtop sheeters with a table — check whether the output is a round base or a sheet before you order.

How much time does a dough roller actually save?

The saving is large and easy to measure, which is unusual in kitchen equipment.

An experienced pizzaiolo hand-stretches a 12-inch base in roughly 40–60 seconds. An untrained member of staff takes 90 seconds and produces an uneven, patchy base with thin spots that tear. A twin-roller machine produces the same base in 3–5 seconds, and it produces the same base every time regardless of who is operating it.

Working from a 200-base day at a busy UK takeaway: hand-stretching at 50 seconds each is 2 hours 47 minutes of labour. Rolling at 4 seconds each, plus handling, is roughly 25 minutes. That is over two hours of chef time recovered every day. At £13 an hour including on-costs, across six trading days, that is around £160 a week or £8,300 a year — against a machine costing £811 to £1,264.

Realistic throughput figures for planning:

Those numbers assume the dough is already portioned, balled, and proved. Portioning is usually the real bottleneck, and if you are rolling more than about 300 bases a day the next investment is a dough divider-rounder rather than a bigger roller.

Does a roller ruin the crust? The honest answer

A dough roller does change the crust, and pretending otherwise does nobody any favours — but the effect depends entirely on your style of pizza.

Hand-stretching pushes gas from the centre of the ball out towards the rim, which is what creates the airy, blistered cornicione of a Neapolitan pizza. A roller compresses the whole disc evenly, including the rim, so it degases the edge as well as the middle. The result is a flatter, denser rim and a more uniform, biscuit-like base.

For a Neapolitan pizza baked at 450–480°C, that matters and most serious operators hand-stretch. For a New York, American, thin and crispy, or standard UK takeaway pizza baked at 280–320°C, an even, degassed base is arguably what you want — it bakes flatter, does not bubble unpredictably, and portions cleanly.

Three techniques recover much of the difference if you want a rim:

  • Set the roller gap slightly thicker than your finished target and hand-finish the last 20mm of rim by pressing outward with the fingertips — around 6–8 seconds, still far faster than a full stretch
  • Let the rolled base rest 10–15 minutes at room temperature before topping, so the gluten relaxes and some gas regenerates
  • Use a slightly wetter dough and a shorter final proof, which gives the roller less structure to crush

What dough works in a roller, and what does not?

Hydration, temperature, and proof state decide whether a roller works beautifully or wraps dough round the shaft.

Hydration. Most machines in this class handle 55–65% hydration comfortably — the range covering standard UK takeaway and New York style doughs. Above about 68% the dough becomes tacky enough to stick to the rollers and stretch rather than flatten, and above 70% you will fight it constantly. If you run a high-hydration Neapolitan dough at 62–65% with a long cold ferment, test before you commit.

Temperature. Dough should be at 16–20°C going through the rollers. Straight from a 3°C fridge it is too stiff, the rollers slip, and the base comes out with a rough torn edge. Temper balls at room temperature for 45–90 minutes depending on ambient. Above about 24°C the dough goes slack and sticky and picks up on the rollers.

Portioning. Consistent ball weight is what makes consistent bases. Typical UK weights: 180–200g for a 10 inch, 250–280g for a 12 inch, 320–360g for a 16 inch. If your balls vary by more than about 15g the finished diameter will visibly vary at a fixed roller gap.

Flour and dusting. Use semolina or a hard flour lightly on the rollers, not soft flour, which cakes. Most machines have a flour tray and a scraper bar; keep the scraper adjusted so it touches the roller without dragging.

Doughs that will not work: enriched brioche-type doughs, anything with large inclusions such as whole olives or nuts, very short pastry, and gluten-free doughs, which have no elasticity and simply crumble under the rollers.

Electrical, guarding, and hygiene requirements in the UK

A dough roller is a guarded moving-parts machine, so both PUWER and food hygiene rules apply to it directly.

Electrically these are modest machines. Most bench rollers run 0.37–0.75kW single phase at 230V, drawing under 4A, so a standard 13A socket is sufficient. Larger production machines may be 1.1kW and some are three phase — check the data plate before assuming, particularly on imported units.

Guarding is the safety point that matters. Under the Provision and Use of Work Equipment Regulations 1998 the in-running nip between the rollers must be guarded, and every commercial machine ships with an interlocked cover or a fixed guard and a feed chute. Never remove or defeat it: an in-running nip pulls fingers in faster than anyone can react. Make an emergency stop test part of your weekly checks, and record the check.

For hygiene, the machine is direct food contact equipment under retained Regulation (EC) 852/2004, so it must be constructed to be cleanable and be cleaned effectively. Practically: isolate at the socket before cleaning, brush out flour daily, remove and wash the flour tray and scraper bars, and wipe the rollers with a damp cloth and a food-safe sanitiser — never soak them, because the shafts and bearings are not sealed against immersion. Fully stainless steel bodies cost £300–£400 more than painted or aluminium ones and are much easier to defend in an inspection, which is why open-kitchen sites choose them.
