What makes a commercial crepe maker different from a domestic one?
The plate is the machine. Everything else is a thermostat and a frame.
A commercial crepe maker uses a solid cast iron plate, normally 400mm in diameter and 8–12mm thick, machined flat and seasoned rather than coated. That mass is what makes it work. When you pour 90ml of cold batter onto a 220°C plate, the batter pulls a large amount of heat out of the surface instantly. Cast iron or non-stick — which plate should you buy?
Buy cast iron for crepes and galettes, and non-stick only if you serve American-style pancakes or run a low-volume site with untrained staff.
Cast iron is the professional standard. It is seasoned rather than coated, so it improves with use, tolerates metal spreaders and scrapers, and lasts decades. It runs hotter — 200–230°C is the working range for a thin French crepe, and 180–200°C for a buckwheat galette. The trade-off is that it needs seasoning and must never be washed with detergent or left wet, because it will rust.
Non-stick plates are more forgiving for staff who have never spread a crepe, and they suit thicker batters that would stick. But the coating is a consumable: at commercial volume with metal tools it will degrade within one to two years, and a scratched non-stick plate is a food safety and quality problem you cannot fix. It also cannot safely be run as hot.
Seasoning a new cast iron plate is quick and worth doing properly. Heat to about 200°C, wipe a very thin film of high-smoke-point oil across the whole surface with a cloth, let it smoke off, and repeat three or four times. Thereafter, scrape the plate clean while hot, wipe with a dry cloth, and re-oil lightly at the end of service. Detergent strips the seasoning and puts you back at the start.

Throughput is set by plate count and by the recovery time between items, and it is far lower than most operators assume.

The iron determines the product, so decide the menu before you buy the machine — you cannot make a Brussels waffle in a Belgian square iron.
