Chamber machine or external sealer — which do you need?

For any commercial kitchen the answer is a chamber machine, and the reason is liquids.

An external suction sealer — the type sold for domestic use — clamps the open end of a textured bag and sucks air out through it. It cannot handle anything wet, because as soon as pressure drops the liquid boils at room temperature and is pulled straight into the pump. It also achieves a much weaker vacuum, typically around 80–90%, which is nowhere near enough to suppress spoilage organisms properly or to give you a bag that will hold shape in a water bath.

A chamber machine places the whole bag inside a sealed chamber and evacuates the air from the chamber and the bag simultaneously. Because the pressure inside and outside the bag is equal throughout the cycle, liquids stay put. Chamber machines reach around 99.8% vacuum — usually quoted as a residual pressure of 2 millibar or better — and they use plain, smooth, cheap bags rather than the expensive embossed type an external sealer requires.

That bag cost difference alone usually justifies the machine. Smooth chamber bags run roughly 4–7p each in the sizes most kitchens use; embossed external-sealer bags are commonly three to four times that. At 60 bags a day the saving is around £250–£400 a year, before you count the fact that you can now bag stocks, sauces, and marinades at all.

How much shelf life does vacuum packing actually add?

Removing oxygen slows aerobic spoilage bacteria and stops oxidative rancidity, and in a chilled kitchen that typically multiplies safe life by three to five times.

Working figures for product held at 0–3°C, assuming it was fresh and handled correctly before packing:

  • Raw beef and lamb: 3–4 days unpacked → 14–21 days vacuum packed
  • Raw pork: 3 days → 10–14 days
  • Raw poultry: 2 days → 6–9 days
  • Hard cheese: 7–10 days → 4–8 weeks
  • Cooked and blast-chilled sauces: 5 days → 12–15 days
  • Prepped vegetables: 2–3 days → 7–10 days

Two warnings that matter more than the numbers. First, vacuum packing does not improve poor product — it preserves whatever bacterial load you sealed in, so the gain only exists if the product was fresh and the handling was clean. Second, and critically, removing oxygen creates conditions that favour anaerobic organisms, which brings us to the rule every UK kitchen must know.

What are the UK rules on vacuum packing and botulism?

The Food Standards Agency treats vacuum packing and modified atmosphere packing as processes that require specific controls, because they remove oxygen and therefore remove the natural check on non-proteolytic Clostridium botulinum.

The FSA position is that vacuum-packed chilled food with a shelf life of more than 10 days must have at least one additional control in place. The recognised controls are:

  • Storage at 3°C or below throughout the whole shelf life
  • Storage at 3–8°C with a shelf life of 10 days or less
  • A heat treatment of 90°C for 10 minutes (or an equivalent lethality) at any point in the process
  • pH of 5.0 or below throughout
  • Salt at 3.5% or more in the aqueous phase throughout
  • Water activity of 0.97 or below
  • A validated combination of the above

In practice this means the great majority of UK kitchens should work to a 10-day maximum shelf life on vacuum-packed chilled product held at 3–8°C, and should hold at 0–3°C if they want to go longer. That decision, and the reasoning behind it, belongs in your HACCP plan in writing.

The other legal points: your local authority may require approval if you vacuum pack products of animal origin for supply to other businesses rather than direct to consumers, so speak to your EHO before you start wholesaling. Label every pack with the pack date and the use-by date at the moment of sealing. And keep the fridge temperature records that support your chosen shelf life, because they are the evidence that your control is real.

Size the seal bar to your longest product, not your average one. A 310mm bar will not take a whole beef striploin or a large brisket, and trying to seal on a diagonal produces weak corners that fail in the water bath. If you butcher whole primals, start at 400mm.

How do you cook sous vide safely in a UK kitchen?

Sous vide means cooking vacuum-sealed food in a precisely controlled water bath, usually at a temperature far below conventional cooking, held for far longer.

Pasteurisation is a function of time and temperature, not temperature alone. The UK reference point most chefs work from is 70°C for 2 minutes at the core, and the equivalent-lethality combinations below deliver the same 6-log reduction:

  • 60°C for 45 minutes at core
  • 62°C for 20 minutes
  • 65°C for 10 minutes
  • 70°C for 2 minutes
  • 75°C for 30 seconds

These are core times, and they begin once the core has reached the temperature — not when the bag went in. A 4cm steak takes roughly 90 minutes to reach core in a 58°C bath before the hold time even starts. Use a needle probe through closed-cell foam tape, or work from validated thickness tables, and record it.

Common working combinations: beef sirloin 54–56°C for 2 hours; brisket or shin 65°C for 24–36 hours; chicken breast 63°C for 90 minutes; pork belly 72°C for 12 hours; carrots and root vegetables 84–85°C for 45–60 minutes.

The chilling side is where kitchens get caught. Anything cooked sous vide and not served immediately must be chilled rapidly — ideally in a blast chiller, or in an iced water bath — from 70°C to below 3°C, and then held at 0–3°C. If you cannot chill it fast, cook it to order. Never cool a sealed sous vide bag slowly at room temperature; that is precisely the anaerobic, warm, oxygen-free condition the botulism rules exist to prevent.

Which bags should you use, and how do you look after the pump?

Bag specification is not a place to save money, and pump oil is not optional.

For chamber machines use smooth, food-grade, PA/PE co-extruded bags. For chilled storage 70–90 micron is normally adequate; for sous vide cooking use 90 micron or heavier, and confirm the bag is rated for the temperature you will cook at — most quality bags are rated to around 100°C. For frozen storage, heavier gauge resists puncture from bone and ice. Bags must be marked as suitable for food contact; the glass-and-fork symbol or an explicit food-grade declaration is what your EHO will look for.

Leave 60–80mm of clear film between the product and the seal bar. Any moisture, fat, or crumb crossing the seal line creates a channel leak, and a channel leak in a sous vide bag means the bag floats, cooks unevenly, and is a food safety failure rather than a cosmetic one. On wet product, a double seal is worth the extra second.

Maintenance is mostly the oil pump. Most chamber machines use an oil-lubricated rotary vane pump, and the oil emulsifies as it absorbs the moisture pulled out of food. Run the machine's dedicated pump-conditioning or de-gas cycle weekly — usually a 15–20 minute run with the lid closed and no product — and change the oil every 6 months or roughly 500 hours, whichever is sooner. Milky, cloudy oil in the sight glass means change it now. A neglected pump loses vacuum depth long before it fails outright, and by then you have been sealing at 95% and quietly shortening every shelf life in the fridge.

Replace the seal bar Teflon tape and the silicone counter-bar when the tape scorches or the seal starts coming out patchy. Both are cheap consumables, and both cause failed seals long before anyone suspects them.
